One of my good friends, Hillary Webb, has a long standing dream of opening a restaurant, and not just any restaurant, but one that will send your tastebuds into a frenzy with its eclectic yet cohesive flavour palette, clean and vibrant atmosphere, and unique charm that is only given off by a truly dedicated and passionate owner. I first was exposed to her creations when I and a number of other friends were invited to a taste test at her home in August. The crowd favourite of that night was a peach bacon panini with smoked gouda and sriracha mayonnaise. The peaches were prepared on a grill so they became soft and syrupy sweet, then when paired with the sharp salt of the crispy thick cut bacon, creamy texture of the cheese and the satisfying kick from the sriracha mayo, everything came together seamlessly and satisfyingly. Most of us were chomping at the bit for more. Sad as I am to say, I was not able to get photos of that event, however, the breakfast version happened not too long ago, and I was equipped with my camera.
